Rather, the simple, clean flavors of the region with family recipes like Sopa de Calabazitas with zucchini, corn and queso fresco … Poblano Chile Rellenos stuffed with locally foraged mushrooms … or Chicken Enchiladas Suizas with tomatillo or red mole sauce. Start with a Hibiscus Margarita, and finish with a Mexican-inspired dessert like Kahlua Creme Brulee or housemade tropical sorbet.
